Have just installed Roger Wensley's Dillingham scenery and would like to add the AI package, but really only want the DC-3, DC-6 and CV-440 AI aircraft. Is there any way the package can be installed with the modern aircraft negated or removed? And would the relevant flight plans need to be deleted. It is a really nice piece of scenery but I don't want 737s and SF340s showing up.

If the aircraft you don't want are not currently installed on your computer, just don't install them. The flight plans do not need to be deleted.
If they are installed, either delete them or (if not used for other AI purposes) change the title= line in the aircraft.cfg file so the AI engine can no longer find them.

It has been so long since I have installed AI the FlightPlans_PADL and Aircraft_PADL that I have completely forgotten how to do them and cannot find the instructions I printed out ages ago. So could someone be kind enough to walk me through the steps again so I may get these installed.

You should have 3 text files, FlightPlans... Aircraft... and Airports...
You download and install a program like TTools or AIFP for FS9 or AIFP for FSX. Then load the Flightplans file into the program, and choose Compile.
